A Pig Roast To Remember!

Now, tell me how often do you get invited to a pig roast on a deserted island with a group of boaters?  Pretty cool right?  What a blast it was!  You are probably wondering how it all came together and where did the pig come from.  Well, keep reading this was a pig roast to remember!

The Preparation

One of the catamarans carries a smoking box on board.  He assembles it into this box that he puts the pig into and the coals go on top of the box.  They can also grill on top of the coals.  It’s pretty cool, and don’t worry I included pictures in this post.  So it smokes for around 4 hours maybe a little more maybe a little less.   After a while, they flip the pig over and cook it some more.  They also put a lot of slits in the skin to make the cracklin.  Once it is done temperature-wise it is feast time.  

Pot Luck

So, while the pig is smoking other boaters bring side dishes to share or a dessert to share.  We all bring our own beverages to drink and something to sit on.  Pig Roast complete.  There was quite a large group of fellow sailors.  What a great afternoon it was.  We were so thrilled to have been invited and to experience this.  On top of all of that, we meet a lot of really fun people and made some lasting friendships.  Check out all of the pictures, and then go eat, your mouth will be watering after you look at all the photos… It makes me hungry just writing this post.    This was a pig roast to remember!  Tomorrow we are going to head over to Hillsboro and check out a little of the town.
